We bought this book this past weekend. It was in the bargain area of Barnes and Noble. This book has some great recipes. I made Oatmeal Chocolate Chip cookies today and they are a hit! The yellow cake mix makes a better cookie dough than homemade cookie dough...the cookies just have a better flavor. I had to add more time to the baking time than the recipe called for. I'm not sure if it's my oven or the recipe. I should check the oven temperature one of these days.
There are plenty of fancier recipes for occasions such as picnics, holidays, etc.
In all, a really handy book and one I'm sure I'll use quite a bit.
**Oatmeal Chocolate Chip cookies**
1--box yellow cake mix (MY note: butter recipe is good)
1 cup quick cooking oatmeal
1 1/2 sticks of butter, softened (very soft)
2 eggs
1 cup chocolate chips
In large bowl, mix cake mix, oatmeal, softened butter and eggs. Mix well. (MY note: Batter will be stiff and will take a while to mix properly). Add chocolate chips and mix well. Drop dough by rounded spoonful onto ungreased baking sheet. Bake in 350 oven for 10-15 minutes. (MY note: 15 minutes seems to be the best baking time.)
I guess you could substitute chocolate cake mix for the yellow cake mix and have double chocolate oatmeal cookies.
